Fresh Peach Vinaigrette

Are you looking for a different salad dressing for your labour day long weekend BBQ? Then you must try this fresh peach vinaigrette using a few simple ingredients and your food processor. Basically all you need to do is put all the ingredients in the food processor, hold the button down for 30 seconds and there you have it, a sweet, fresh peach dressing for your salad.

I used this dressing on a salad with chopped pecans and crumbled blue cheese. The sweetness of the peach dressing was just perfect with the tangy blue cheese.

I don’t want summer to end and I plan to enjoy this last long weekend of summer. My plans for this weekend involve one last summer hoorah in Pacific Beach WA with two of my favourite people. I encourage you to enjoy these last few days of summer, hope for sunny days and enjoy some delicious food with your favourite people.

Total Time: less than 10 minutes
Servings: makes about 1 cup of vinaigrette

Ingredients:

  • 1 ripe peach
  • 1 1/2 tbs orange juice
  • 1 tbs red wine vinegar
  • 1 tsp dijon mustard
  • 2 tbs olive oil
  • 1 tbs honey

Directions:

Peel and slice the peach. Put everything in the food processor and process until combine and smooth.

That’s it! Done! Peach Vinaigrette!
