With summer on our doorstep all I want to do is barbecue and sit in the long awaited sunshine, but first I need to get my husband to clean the barbecue and get propane, then I have to hope the sun will stay out until I get home from work.
The warmer weather also has me craving more light, fresh foods. I’ve said before that I really like salads, but only if they’re interesting and have lots of delicious and healthy ingredients in them that are going to make me feel full and satisfied. This is arugula salad with strawberries and balsamic vinaigrette is just that, delicious, fresh and summery.
We had this salad as a side dish for a simple roasted chicken. It would also go great with grilled chicken or steaks. So head to the store on your way home from work today and pick up the ingredients to make this salad for a quick, fresh and delicious dinner.

Ingredients:
For the salad:
- 1 container of arugula or mixed spring greens
- about 10 strawberries sliced
- 1/2 cup pecans roughly chopped
- 3 oz goat cheese crumbled
For the dressing:
- 1 small clove of garlic grated or very finely diced
- 2 tsp Dijon mustard
- 1 tsp honey
- 4 tbs olive oil
- salt and pepper to taste

Directions:
Combine all of the salad ingredients into a large serving bowl.
To make the dressing combine all of the ingredients in a small bowl and whisk until combined.
Dress your salad with as much or as little dressing as you like.
